It’s HOLIDAY COOKIE TIME! Hooray! And what better and more festive way to celebrate the holidays than a few Mint Meringues!
My mother makes these every single year and I have to say they are amazing. Once I became a grown up I started making them for my own cookie baskets, only because they are super easy, super delicious and super addictive. Light and airy, full of minty, yummy goodness, accented with a little hint of chocolate and perfect for your holiday gifts.
Holiday Mint Meringues
Ingredients
2 egg whites, at room temperature - This is SUPER important. If they aren’t room temp, then they won’t beat up as well into peaks.
1/2 tsp Cream of Tartar
1/2 tsp mint extract
1/2 cup Sugar
Liquid Food Coloring – I use green because they are mint, but make them festive!!! Whatever color you’d like!
1 (6 oz) package semi sweet chocolate chips, chopped
A few paper bags
Directions
Combine the egg whites and mint extract in a bowl and beat until frothy. Add the cream of tartar and the sugar one tablespoon at a time, beating the eggs until they are glossy and stiff peaks form. This is really important. You want these babies to be SUPER stiff.
Beat in the food coloring.
Once you have SUPER stiff egg whites, fold the chocolate chips into your meringue.
Take your paper bag and cut out a rectangle to fit your cookie sheet. Place it at the bottom of the cookie sheet and drop rounded teaspoons (or if you’re feeling REALLY fancy, pipe it out) of meringues onto the sheets.
Bake at 200 degrees for 1 hour or until dry and set, but do NOT let them brown.
Cool on wire racks and then store in an airtight container to keep them from getting soft and squishy.
