So I almost feel guilty posting this recipe because it’s just so NOT a recipe. But, I had the good fortune to have some freshly smoked salmon handed to me by my SUPER hot firefighter neighbor (did I mention I love our neighborhood) and I wasn’t quite sure what I wanted to do with it.
According to the Food Network I could have made some yummy and fancy hors d’oeuvres with it to throw at my next party… whenever that might be. I could have put it in pasta… which probably would have gone to waste. I probably could have even thrown it into eggs and made some sort of delicious quiche or something, but honestly? The ONLY thing to do with smoked salmon is pair it with cream cheese.
Because everything is better in cream cheese.
And I remembered having a DELICIOUS smoked salmon spread from Costco a few years ago (and pretty much eating the entire tub by myself) so I thought, hrm, what the hell, I’m good at replicating things…
So if you have smoked salmon just lying around your house… that has preferably been handed to you by a SMOKING hot firefighter who regularly mows his lawn shirtless… this dip is for you.
And seriously, if you want to come over to my house to watch the spectacle? Come on by.
I’ve got lawn chairs.
And wine.
And a camera.
Smoked Salmon Dip
Ingredients
6 oz Smoked salmon – We prefer our smoked salmon line caught and personally smoked by shirtless firefighters… but whatever you can get at the store.
1 Tub of Cream Cheese – I used light cream cheese because when mixing it it doesn’t really matter. But full fat cream cheese is perfectly acceptable. Mmmm, full fat.
1.5 Tb (or so) of Capers – Is it weird that I have a jar of these in my fridge at ALL times? The Big Kid even eats them out of the jar… obviously my son.
Directions
Put smoked salmon, cream cheese, and capers into a food processor. Pulse until combined but not necessarily smooth… depends how chunky you like your dip. If you want a little extra bite into your dip, fold in some whole capers afterwards.
Enjoy on toast points, bagels, cut up veggies, or on a spoon… preferably while sitting on my front lawn watching my hot neighbor mow…
