Easter brunch has GOT to be one of my favorite meals of the year. The daffodils are out, the sun is shining… what better time to gorge yourself on ham and au gratin potatoes. And sugar cookies in the shape of eggs. And pastel colored meringues…

This recipe puts the OOHHHHHHH, in Au Gratin Potatoes, with tons of cheese and butter. It’s to die for. Quite literally, you may have a coronary from eating these. HEY, what are holidays for.
Make up a batch of these little babies to put into Easter baskets and dye them different colors to match your Easter Eggs!!
Cut them in the shape of flowers and plant them in your Easter basket. Or cut them as eggs and decorate them! MUCH tastier than an actual hard boiled egg. That is unless you know how to hard boil the PERFECT egg! Check out how!!
