It’s hot. Like so blasted hot that I am sitting on the couch, sweating from the heat of the computer. So. very. hot.
And I’m never quite sure what to eat when it’s this hot. The thought of cooking the kids breakfast when it’s already sweltering by 8:30 is less than appealing, dripping sweat as I make pancakes over a griddle, or fry eggs. Gross.
But how about an easy and healthy breakfast recipe that is deliciously cool, but still satisfies with crunchy granola and creamy greek yogurt?
Guys – it’s so easy, especially with Clover’s new Organic Greek Yogurt. It’s so thick and creamy and turns into a completely decadent addition to these parfaits when swirled with cinnamon and honey. It’s the perfect healthy breakfast for a hot morning, just don’t tell the kids that it’s good for them… they won’t believe you.
Here’s everything that you’ll need to make a healthy breakfast, in no time flat!
Cinnamon-Honey Breakfast Parfait
1 container of Clover Organic Vanilla Greek Yogurt
1/2 a Banana
1/4 of an Apple
1/4 an Orange
(Note: you guys could change the fruit up to whatever you want, but the apples and bananas have a nice weight in this recipe and give it some crunch and heft. The orange also cuts the yogurt nicely with its sweet acidic juice.)
1/2 teaspoon of cinnamon
1/2 teaspoon honey
A few tablespoons of granola, your choice
